Tony Ferguson's Traditional Trifle

(Serves 2)

Ingredients

  • 1 Tony Ferguson French Vanilla shake packet
  • 1/2 Tablespoon Simply Fiber
  • 1 1/2 Tablespoons baking sweetener e.g. Splenda
  • 8 oz cold water
  • 1 Tony Ferguson Banana shake packet
  • 2 Tablespoons fat free ricotta cheese
  • 2 serves of allowed fruit e.g. blueberries or mango
  • 1 packet of Tony Ferguson Sugar Free Gelatin made according to the directions the night before

Method

  1. In a microwave safe small bowl, add the French Vanilla packet contents, Simply fiber, 1 tablespoon of sweetener and 4 oz of room temperature water. Combine well to make a thick batter, then allow to sit for 2 minutes.
  2. Place vanilla mixture in the microwave for 1 minute and then check that it has a soft firm cake consistency. If not, place in the microwave for a further 20 seconds and repeat process until satisfied. Then allow the cake to cool. Once cooled using a knife chop into strips.
  3. In another small bowl, add the Banana packet contents and gradually add 4 oz of cold water stirring continuously until well combined to make a pudding consistency.
  4. In a small bowl, add the ricotta and half tablespoon of Splenda and combine.
    Once the cake has cooled and the sugar free gelatin, ricotta, fruit and pudding are prepared, obtain 2 nice serving glasses.
  5. To each glass add a small layer of sugar free gelatin, follow by ¼ of the pudding, ¼ of the cake, a drop of ricotta and ¼ of the fruit, then repeat the process.
  6. Place the layered trifle in the fridge to cool for an hour or so.

Tips

  • You may use any flavour of sugar free gelatin or shake as well your favourite fruits.
  • This recipe serves 2, each trifle serve replaces 1 Tony Ferguson shake and a one fruit serve.
