Salmon & Ricotta Patties
(Serves 2 Females OR 1 Male)
Ingredients
- 6 Oz of salmon canned in spring water with no bones contained
- 3.5 Oz of fat free ricotta cheese
- ¼ Medium red onion, finely chopped
- 6 Large basil leaves, finely chopped
- 1 – 2 Clove garlic crushed
- Salt and cracked pepper for seasoning (as desired)
- 1 Small lemon cut into quarters
- 1 Tablespoon of olive oil
Method
- In a medium bowl, combine the salmon, ricotta, onion, basil, garlic and seasoning.
- Divide the mix up into about 4 and form patties.
- Heat the oil in a medium fry pan on medium heat. Add the patties and toast until golden on each side.
- Serve immediately on a bed of Notatoes with a side salad and the lemon quarters to squeeze on the patties.
