Strawberry Panacotta

Ingredients

  • 1 Sachet of Tony Ferguson Sugar-free Gelatin
  • 2 Tablespoons of low fat ricotta cheese
  • ½ - 1 Serve of fruit of choice e.g. strawberries chopped into small pieces
  • 1 cup water (½ cup boiling, ½ cup cold)

Method

  1. Obtain a glass cup or similar sized glass serving bowl, add the gelatin crystals and ½ cup boiling water and stir to dissolve the gelatin crystals.
  2. Add ¼ cup cold water and combine well.
  3. Place the other ¼ cup of cold water in a small bowl, add the ricotta and combine well to make a smooth consistency. Then add this to the gelatin mix and combine.
  4. Either add the fruit or half the fruit to the gelatin mix or save fruit for serving.
  5. Place the gelatin mix in the refrigerator for several hours or until set.
  6. Serve as a dessert.
