Summer Vegetable Omelet
(Serves 1)
Ingredients
- 2 Eggs
- ½ Cup mushrooms, sliced
- ½ Cup spinach, finely chopped
- ½ Medium zucchini, grated
- 1 Clove garlic, crushed or chopped
- 1 Shallot, finely chopped
- 3 - 5 large basil leaves or mixed herbs if you prefer, finely chopped
- ½ Tablespoon olive oil
- A pinch of salt and pepper as desired for flavor
Method
- Beat eggs in a medium bowl, then add vegetables, shallots, garlic, basil, salt and pepper and combine well.
- Heat oil in medium fry pan.
- Add omelet mix and ensure it's evenly spread out.
- Cook on both sides until golden brown.
- Serve with a side salad.
