Summer Vegetable Omelet

(Serves 1)

Ingredients

  • 2 Eggs
  • ½ Cup mushrooms, sliced
  • ½ Cup spinach, finely chopped
  • ½ Medium zucchini, grated
  • 1 Clove garlic, crushed or chopped
  • 1 Shallot, finely chopped
  • 3 - 5 large basil leaves or mixed herbs if you prefer, finely chopped
  • ½ Tablespoon olive oil
  • A pinch of salt and pepper as desired for flavor

Method

  1. Beat eggs in a medium bowl, then add vegetables, shallots, garlic, basil, salt and pepper and combine well.
  2. Heat oil in medium fry pan.
  3. Add omelet mix and ensure it's evenly spread out.
  4. Cook on both sides until golden brown.
  5. Serve with a side salad.
