Curried Sausages

(Serves 4)

Ingredients

  • Lean beef sausages, small to medium size (2 sausages per female or 3 sausages per male)
  • 1 Large brown onion
  • 1 Cup of mushrooms, sliced
  • ½ Bag mixed frozen vegetables (carrots, green beans, broccoli and cauliflower)
  • 1 Tablespoon parsley flakes
  • 1 Teaspoon oregano leaves
  • 2 Cups salt reduced vegetable stock
  • 1 Tablespoon olive oil

Curry sauce

  • 1 Teaspoon curry powder (your choice of strength)
  • 1 Clove of garlic, crushed
  • 1Teaspoon of mustard powder
  • ½ Teaspoon ginger, crushed
  • 3 oz Low fat smooth ricotta cheese

Method

  1. Place a medium fry pan on high heat and add oil.
  2. Cook sausages until golden, then cut into 1 inch round pieces.
  3. Add sausages to a wok with chicken stock, onion, garlic, ginger, mushrooms, herbs and mixed vegetables. 
  4.  Cook for 20 minutes covered, stirring every 5 minutes.
  5. Add curry sauce to the mixture and combine well. (You may want to add a little more mustard powder or curry powder, depending on your taste)
  6. Reduce heat and simmer for a further 15-20 minutes uncovered to allow some of the sauce to thicken and evaporate, stirring every 5 minutes.
  7. Serve immediately.

Curry sauce

  1. In a small bowl mix all ingredients together.
  2. Add to the wok with sausage and vegetables when the method instructs you to do so.

Suggestions

  • You can serve this dish with notatoes or on it’s own. Chicken sausages or vegetarian soy sausages can be used instead of beef.
  • If you use regular low fat ricotta rather than low fat smooth ricotta we would suggest that you put the ricotta in the microwave for 30-60 seconds on high to soften it up a bit.
