Oven Roasted Vegetables

(Serves 2)

Ingredients

  • 1 Medium eggplant, chopped into 1 inch cubes
  • 2 Large zucchini, chopped into ½ inch semi-circles  
  • 1 Cup pumpkin, chunkily chopped
  • 1 Medium red bell pepper, chopped into 1 inch squares
  • 3 Large tomatoes, finely chopped
  • 1 Large onion, finely chopped
  • 3 - 4 Cloves of garlic minced
  • 10 Fresh basil leaves, finely chopped
  • Olive oil cooking spray
  • Salt as desired

Method

  1. Pre – heat oven to 380°F.
  2. Evenly spray olive oil spray over a large baking dish.
  3. Add all ingredients and combine well.
  4. Spray the top lightly with olive oil spray.
  5. Place vegetable mix in the oven and roast for about 40 minutes or until vegetables are tender. You may need to cover them with aluminum foil half way through to prevent the top from burning and help the vegetables cook through.
  6. Serve immediately alongside a protein serve, instead of a salad with your shake or enjoy as a snack during the day.
