Balsamic Chicken

(Serves 4)

Ingredients

  • Lean chicken breast pieces (Females: 4 x 4 oz OR Males: 4 x 7 oz)
  • 2 Tablespoons balsamic vinegar
  • 1 Clove of garlic, crushed
  • 2 Tablespoon extra virgin olive oil
  • 1 Cup of button mushrooms, sliced
  • 1 Cup salt reduced chicken stock
  • 2 Teaspoons fresh thyme leaves
  • 1 Tablespoon fresh chopped parsley
  • 1 Cup broccoli florets
  • 1 Cup cauliflower florets
  • 1 Small zucchini sliced

Method

  1. Combine balsamic vinegar, garlic and 1 tablespoon of oil and mix. Coat each chicken breast in the vinegar mixture.
  2. Heat 1 tablespoon of oil in a large frying pan. Cook chicken for 3 minutes on each side. Remove chicken from the pan.
  3. Add mushrooms to the pan and cook for 2 minutes until soft. Add stock and bring to the boil. Simmer until reduced by half. Return chicken to the pan until heated through and stir through herbs.
  4. Steam vegetables and serve with chicken, mushrooms and sauce.
