Pork with Herb and Garlic Mushrooms
Serves: 4
Ingredients
4 x 4 oz Lean pork loin, fat removed (women) OR
4 x 7 oz Lean pork loin, fat removed (men)
2 Cups mushrooms, sliced
2 Cups lettuce, chopped
10 Cherry tomatoes, halved
¼ Red bell pepper, diced
¼ Avocado, sliced
1 T dressing ( 5g /serve carb )
1 Tablespoon chives, dried
¼ - ½ Teaspoon garlic, crushed
Olive oil spray
Method
1. Place a medium size pan, on high heat and lightly spray with olive oil spray.
2. Place pork loin in pan and cook until it is cooked through.
3. Place a second fry pan on medium heat, spray with olive oil and add mushrooms. When the mushrooms begin to brown and soften add garlic and chives.
4. In a bowl add the lettuce, tomatoes, red bell pepper and avocado, toss and then place salad on the serving plate.
5. Once the mushrooms are cooked to your liking, arrange them on the serving plate next to the salad.
6. Cut cooked the cooked pork loin into small pieces and place on top of the mushrooms.
7. Drizzle the dressing over the salad and serve (if desired, this could be added in step 4 and tossed with the salad to combine).
Serving suggestion:
You can use any type of protein with this dish such as chicken, steak or tofu
