Beef Stir fry

(Serves 2)

Ingredients

  • Beef strips (Females: 2 x 4 Oz OR Males: 2 x 7 Oz)
  • 1 Small onion, diced
  • 1 Medium carrot, chopped into match sticks
  • 1 Medium zucchini, chopped into match sticks
  • 1 Medium green pepper, diced
  • 1 Cup of spinach, finely chopped
  • 1 Cup of cauliflower florets, halved
  • 1 Tablespoon of olive oil
  • 1 Tablespoon of fresh oregano or herb of choice
  • 2 Cloves of garlic, finely chopped
  • 1 Heaped teaspoon of beef stock powder
  • 1/2 - 1 Cup of water
  • Salt and black pepper to taste

Method

  1. In a large fry pan, heat olive oil on medium high heat. Add beef and cook for 3-5 minutes, stirring occasionally to prevent sticking.
  2. Add onion and garlic and combine, then toast for 1 minute.
  3. Add 1/2 cup of water, stock and black pepper. Combine well and simmer for 2 minutes, then add all the vegetables and oregano.
  4. Add more water if the mixture dries up too much, it should be a little saucy.
  5. Cook for another 5 - 10 minutes, taste and add a pinch of salt if it needs it.
  6. Serve immediately.

Note:

  • You may use other protein options such as chicken or lamb if preferred.
