Vegetable and Tomato Casserole

Ingredients
- 2 Cups of Snow pea or green beans, chopped in half
- 4 Medium tomatoes, finely chopped
- 1 Large zucchini, halved and sliced into half centimetre semi circles
- 1 Small onion, finely chopped
- 2 Cloves of garlic, crushed
- 1 Medium red capsicum, sliced into thin slices
- 1 tablespoon of olive oil
- 1 Cup of water
- Salt and pepper as desired to taste
- 1 Tiny red chilli, seeds removed and chopped finely (optional)
Method
- Heat olive oil in a large saucer pan on medium to high heat.
- Add onion, garlic and chilli, combine and toast until just getting golden.
- Add zucchini, snow peas and capsicum, combine and cook until half cooked.
- Add tomatoes, water, salt and pepper, mix well and simmer for 15 minutes.
- Serve hot or chilled as a vegetable side dish or a snack between meals.
