Vegetable and Tomato Casserole

Ingredients

  • 2 Cups of Snow pea or green beans, chopped in half
  • 4 Medium tomatoes, finely chopped
  • 1 Large zucchini, halved and sliced into half centimetre semi circles
  • 1 Small onion, finely chopped
  • 2 Cloves of garlic, crushed
  • 1 Medium red capsicum, sliced into thin slices
  • 1 tablespoon of olive oil
  • 1 Cup of water
  • Salt and pepper as desired to taste
  • 1 Tiny red chilli, seeds removed and chopped finely (optional)

Method

  1. Heat olive oil in a large saucer pan on medium to high heat.
  2. Add onion, garlic and chilli, combine and toast until just getting golden.
  3. Add zucchini, snow peas and capsicum, combine and cook until half cooked.
  4. Add tomatoes, water, salt and pepper, mix well and simmer for 15 minutes.
  5. Serve hot or chilled as a vegetable side dish or a snack between meals.
