Peppery Saltimbocca on a Bed of Notatoes

(Serves 4)

Ingredients

  • New York Strip Steak (Females: 4 x 4 oz OR Males: 4 x 7 oz), beaten with a meat mallet to flatten
  • 4 Slices of lean ham
  • 2 Eggs
  • ½ - 1 Cup of Simply Fiber
  • ½ Medium cauliflower, chopped into chunky florets
  • 2 - 3 Tablespoons of fat free smooth ricotta cheese
  • 1 Tablespoon of shallots
  • 1 Tablespoon of fresh oregano or basil, finely chopped
  • 4 Garlic cloves, crushed (for the meat), 1 Garlic clove, crushed (for the Notatoes)
  • 2 Tablespoons of olive oil
  • Garlic and herb seasoning
  • Salt and cracked pepper

Method

For the Steak

  1. On a large plate, separately place each steak, rub each side with crushed garlic, a sprinkle of salt and cracked pepper. Cover with cling film and place in the fridge for 30 – 60 minutes.
  2. Prepare for crumbing by obtaining a medium bowl and beating the eggs. Then get a large plate and add ½ cup of Simply Fiber, a pinch of salt and a sprinkle of herb and garlic seasoning, combine well and spread around the plate evenly (repeat this process if you run out of fiber mix during crumbing).
  3. Once the steak is ready, place a large non–stick fry pan on low to medium heat and add 1 tablespoon of olive oil.
  4. While the oil is heating, separately dip each steak into the beaten egg mixture, allowing excess egg to drip off, then crumb the steak on both sides in the fiber mix.
  5. Place crumbed steaks in the pan and cook slowly until golden on each side.
  6. When the steaks are almost cooked, add the remaining oil to another non-stick fry pan on medium heat. Add ham slices and toast lightly on each side.

For the Notatoes
(Prepare while the steak is marinating)

  1. Steam the cauliflower florets until just tender.
  2. Using a potato masher, mash the cauliflower until fine. Alternatively, you may blend the steamed cauliflower. Squeeze the cauliflower to remove any excess juice.
  3. Place the cauliflower in a large bowl, add the ricotta cheese, 1 clove of garlic, shallots, oregano/basil, salt (to taste) and combine well.

To Serve

  1. Once the steaks and Notatoes are cooked, obtain 4 serving plates and place an even quantity of Notatoes in a circle in the center of each plate.
  2. Add one steak on top and one slice of ham on top of the steak.
  3. Serve with a side salad or vegetable side dish of seasonal vegetables with a splash of Balsamic vinegar.
