Banana Bread
(Serves 4)
Ingredients
2 Tony Ferguson banana shake packets
2 Tony Ferguson french vanilla shake packets
4 Small semi ripe bananas
¼ - ½ Cup Tony Ferguson Simply Fiber (if you like a more fibrous bread use ½ cup)
2 Tablespoons of olive oil
2 Tablespoons of sweetener (ensure it’s suitable for baking e.g. Splenda)
½ Cup water
Method
- Pre-heat oven to 320 degrees Fahrenheit.
- In a large bowl, mash all four bananas.
- To mashed bananas, gradually add contents of all 4 Tony Ferguson packets, combining well as you add.
- Add sweetener, olive oil and combine.
- Gradually add Simply Fiber and water, combining well to make a thick dough.
- Grease a non–stick loaf tin with olive oil and add banana mixture (note: you may need to grease and line the tin with baking paper if your tin is not non-stick).
- Place banana mixture in the oven and cook for 25 minutes. Then lower the temperature to 200 degrees, place a sheet of aluminium foil (helps to prevent burning) over the banana bread and cook for a further 20 minutes.
- Remove bread from the oven and cool. Slice into 1 inch thick slices.
- This can be served warm or cold or even heated later.
- Keep in the refrigerator.
Note:
Each serve is equivalent to 1 Tony Ferguson shake and one fruit serve.
