Mediterranean Tuna

 

(Serves 4 females or 2 males)

Ingredients

  • 15 Ounces tinned tuna in spring water
  • 1 x 14 Oz Tin of crushed tomatoes
  • 2 Large ripe tomatoes, finely chopped
  • 4 Large summer squash, cut into chunks
  • 10 Medium mushrooms, finely chopped
  • 1 Onion, finely chopped
  • 1 Large red bell pepper, thinly sliced
  • 2 – 3 Cloves of garlic
  • 1 Small chilli, deseeded and finely chopped (optional)
  • 8 Large fresh basil leaves torn
  • 2 Tablespoons  of fresh oregano, finely chopped
  • ¼ Cup of water
  • 1 Tablespoon of olive oil
  • Salt and cracked pepper to season

Method

  1. In a large fry pan, heat the olive oil on medium heat.
  2. Add the onion, garlic and chilli and cook until the onions are lightly browned.
  3. Add mushrooms, squash and bell pepper and cook until vegetables are softened.
  4. To the vegetable mix add the tinned tomatoes, fresh tomatoes, salt and pepper, combine well, reduce heat to low and simmer for 5 minutes.
  5. Add the tuna, herbs and water, combine and allow to simmer for a further 5 - 10 minutes or until sauce reduces. Taste and adjust seasoning if necessary.
  6. Serve immediately with a side salad.

Tips

  • Don’t over stir the tuna as it is soft and will break up easily.
  • If a more tangy flavour is desired, add a squeeze of lemon juice when serving.
