Mediterranean Tuna
(Serves 4 females or 2 males)
Ingredients
- 15 Ounces tinned tuna in spring water
- 1 x 14 Oz Tin of crushed tomatoes
- 2 Large ripe tomatoes, finely chopped
- 4 Large summer squash, cut into chunks
- 10 Medium mushrooms, finely chopped
- 1 Onion, finely chopped
- 1 Large red bell pepper, thinly sliced
- 2 – 3 Cloves of garlic
- 1 Small chilli, deseeded and finely chopped (optional)
- 8 Large fresh basil leaves torn
- 2 Tablespoons of fresh oregano, finely chopped
- ¼ Cup of water
- 1 Tablespoon of olive oil
- Salt and cracked pepper to season
Method
- In a large fry pan, heat the olive oil on medium heat.
- Add the onion, garlic and chilli and cook until the onions are lightly browned.
- Add mushrooms, squash and bell pepper and cook until vegetables are softened.
- To the vegetable mix add the tinned tomatoes, fresh tomatoes, salt and pepper, combine well, reduce heat to low and simmer for 5 minutes.
- Add the tuna, herbs and water, combine and allow to simmer for a further 5 - 10 minutes or until sauce reduces. Taste and adjust seasoning if necessary.
- Serve immediately with a side salad.
Tips
- Don’t over stir the tuna as it is soft and will break up easily.
- If a more tangy flavour is desired, add a squeeze of lemon juice when serving.
