Jaffa Choc Chip Mini Pancakes

(Serves 2)

Ingredients 

  • 7 Oz Fat free cottage cheese
  • 2 Oranges, 1 juiced, the other sliced with skin removed and 1 tablespoon of zest
  • 4 Russell Stover milk chocolate miniatures, 2 chopped into choc chips, the others melted (after pancakes have been cooked)
  • 2 Egg whites
  • 2 Egg yolks, beaten
  • 2 Tablespoons of Tony Ferguson Fiber
  • ¼ Tablespoon of cream of tartar
  • ½ Cup of water
  • 6 Tablespoons of Splenda
  • 2 Tablespoons of Olive oil

Method

  1. Beat the egg whites until frothy, then add the cream of tartar and continue to beat until stiff peaks form.
  2. In separate bowl, mix together the egg yolks, cottage cheese, choc chips, 1 tablespoon of orange juice, 1 teaspoon of orange zest, fiber and half the splenda.
  3. Combine the two mixtures and stir until just combined. The batter should be a thick consistency, if too watery, add ½ tablespoon more fiber.
  4. Add one teaspoon of olive oil to a large non stick fry pan and place on low heat. Heat oil and spread over pan evenly.
  5. Once the oil has heated, drop heaped tablespoons of batter on the surface, spreading each to make a thin mini pancake. Ensure the pancakes are not touching.
  6. Cook until one side has browned, then turn over to the other side very gently and cook until this side has browned. Repeat until all the batter is cooked
  7. While the cottage pancakes are cooking, in a small saucepan add the remaining orange juice, 1 teaspoon of orange zest, 3 tablespoons of sweetener, orange slices and ½ cup of water, then stir to combine. Place on low to moderate heat and heat stirring continuously until syrup thickens.
  8. Divide the mini pancakes evenly on 2 serving plates, top each with half of the orange syrup mix and drizzle with a little melted chocolate on top. Serve immediately!

Hints

  • Each serve contains one protein, one fruit and one treat serve.
  • Always cook pancakes on low heat and be very gentle when turning as they are soft and easily broken. Ensure they are well browned on each side before turning over.
  • If the batter is too thin, add ½ tablespoon more of Tony Ferguson Fiber. Be careful not to add too much fiber or let the batter sit too long as it will thicken if you let it sit.
  • When melting your sugar free chocolate miniatures, place them in a very small dish and microwave on high for 20 seconds. If they haven’t melted, microwave for a further 10 seconds until they do. Be careful not to let it burn and ensure you stir the chocolate as soon as it begins to melt.
  • This is a great breakfast option that the whole family can enjoy and different fruits may be used so feel free to experiment!
  • A great idea for those days you want to have your protein meal for breakfast or alternatively have a big vegetable side dish for your main meal and this for dessert!
