Ricotta Filled Steak with Grilled Zucchini and Tomato Salad

(Serves 2)

Ingredients

Steak and Ricotta

  • 2 x 60g Steak fillets
  • 150g Fat free ricotta cheese
  • 2 Tablespoons of finely chopped shallots
  • 2 Cloves of garlic, crushed
  • 1 Tablespoon basil, finely chopped
  • 1 Tablespoon olive oil
  • Olive oil cooking spray
  • Salt and cracked pepper for seasoning
  • Tooth picks

Grilled Zucchini and Tomato Salad

  • 2 Medium zucchinis, thinly sliced
  • 2 Cloves of garlic, crushed
  • Olive oil cooking spray
  • 4 Medium tomatoes, finely chopped
  • ½ Medium onion, finely chopped
  • 2 - 3 Tablespoons basil, finely chopped
  • 1 Teaspoon olive oil
  • 2 - 3 Tablespoons balsamic vinegar

Method

  1. Pre-heat oven to 380°F.
  2. Beat both steaks with a mallet until thin, then cut in half. Ensure both halves are at least 3 by 3 inches so that they can be used to wrap the ricotta mix.
  3. In a large fry pan heat 1 tablespoon of olive oil on medium heat. While oil is heating, season the steaks with salt and cracked pepper.
  4. Lightly toast steaks until just starting to colour on both sides, then remove from the heat.
  5. In a small bowl combine the ricotta, 2 cloves of garlic, shallots, 1 tablespoon of basil and season with cracked pepper and salt.
  6. Obtain a large plate and place steaks separate on the plate. Evenly divide ricotta mix into four and place a quarter of the mix in a line in the centre of each steak, then wrap the steak ends around the ricotta mix placing 2 tooth picks at each end to hold it in place.
  7. Obtain a baking dish and spray with the cooking spray. Put the steak wraps in the baking tray and place in the oven reducing heat to 345°F.
  8. Bake steak wraps for 10 - 15 minutes or until steak is fully cooked through.
  9. While the steak is baking, spray the zucchini with cooking spray and rub each slice with crushed garlic. Season and place on the grill until cooked to desired softness.
  10. Obtain a medium bowl and combine the tomatoes, onion, basil, 1 teaspoon of olive oil and balsamic dressing. Season if desired.
  11. Once all 3 parts of recipe are completed, serve 2 steak wraps with half the zucchini and half the tomato salad.
